The LEGÙ® blend is composed of 100% Italian legume flours (chickpeas, white beans, yellow peas and yellow lentils) steam cooked without gluten, specifically formulated for celiacs.
This product is vegan, gluten-free and does not contain any allergens. Furthermore, it is rich in vegetable proteins and high in fibre.
The production process of the mixture requires the legumes to be previously soaked, steam cooked, hulled (= stripped of the peel) and dried at low temperatures.
This allows you not to lose the naturally present mineral salts and facilitates digestion, making the product also suitable for children and those suffering from intestinal pathologies.
The production process gives an elasticity to the mixture similar to that given by gluten; therefore, the LEGÙ mixture is suitable for the preparation of sweet products (biscuits, cakes, crêpes, pancakes, muffins, puddings) and savory products (pizza, gnocchi, breadsticks, savory pies and bechamel) since it can be used as a substitute for eggs, starches, isinglass and cereal flour.
