Baldo rice is a historical variety of Italian rice, obtained from the cross between Arborio and Stirpe 136. It is characterized by its large, long and pearly grain, with excellent cooking resistance and notable ability to absorb seasonings and flavours. Thanks to its high starch content, it is particularly suitable for the preparation of creamy and well-creamed risottos, but also for other traditional Italian recipes, such as supplì or arancini.
