Deep ruby red in colour with a characteristic garnet highlight. The nose offers a balsamic bouquet with notes of dried red berries, wild rose and spices, unfolding into nuances of cocoa bean and vanilla. Full-bodied on the palate, with silky, enveloping tannins and remarkable elegance, leading to a long, spicy finish.
Designation: Barolo DOCG
Grape variety: 100% Nebbiolo
Production area: Cannubi hillside, Barolo, Langhe, Cuneo, Piedmont
Training system: vertical trellising with Guyot pruning
Harvest: picked by hand into crates, selecting only the finest bunches
Vinification: the grapes are selectively destemmed and gently crushed before undergoing alcoholic fermentation at a controlled temperature of 24–26°C, preserving the full aromatic potential of this distinctive terroir. Délestage, or rack-and-return, and pump-overs are then repeated during a 15–18-day maceration, encouraging the gradual and complete extraction of the skins’ finest polyphenolic components
Ageing: after racking, the wine undergoes a period of clarification and rest in vitrified concrete vats. It then matures in wood for approximately 24 months: the first 12 months in small French oak barrels to stabilise the colour and increase its ageing potential. The proportion of new oak is carefully balanced to preserve the distinctive identity of this Cru. During the following 12 months, the wine matures in large Slavonian oak casks, enhancing its finesse and elegance. Ageing is completed with at least 12 months in the bottle
