Audere LACIOCCOLATA is an artisan reality rooted in Upper Piedmont. Each of his creations is based on the constant search for authenticity: the work follows artisanal processes that respect tradition and integrate harmoniously with the excellence of the territory. The production philosophy is based on a clear and rigorous rule: use only a few ingredients, the truly essential ones, always natural and selected with the utmost attention.
Chestnut honey is characterized on the nose by aromas of dried chamomile, accompanied by more intense and unusual notes of an animal, tannic and cinchona type. On the palate it stands out for a bitter and slightly astringent taste, with nuances that recall wood, wet tobacco, carob and cocoa bean, which define its complex and decisive profile. Versatile in pairings, it goes well with ricotta and soft cheeses, but is also able to enhance the sweetness of a parmesan; it also finds application in savory cuisine, for example in the fillings of pumpkin tortelli or in preparations with delicately smoked foods. It is particularly interesting if mixed with a very fresh whipped ricotta and in hazelnut-based recipes, as well as in baking with ancient or whole grains.
