HEKATE PASSITO SICILIA I.G.T. 2021

Deep straw yellow in colour. The nose reveals a distinctly tropical character, enriched by delicate notes of mango and papaya. Full-bodied, generous and fruity on the palate, with pronounced hints of almond and apricot. The finish is dry, fresh and citrusy.

Training system: Guyot trellising

Harvest: selectively picked by hand into crates; the grapes are then left to dry naturally in the sun

Vinification: the grapes are destemmed, crushed and gently pressed with complete protection from oxygen, using a reductive winemaking technique. This is followed by natural settling and fermentation at a controlled temperature for several days.

Ageing: maturation on the lees, followed by filtration, stabilisation and bottling.

Alcohol content: 12% – Contains sulphites

Serving temperature: 14–16°C
