PETER IN FLORENCE - LONDON DRY GIN
Juniper and Tuscan iris petals from organic farming, well water, purified and treated by osmosis, certified spices and a purpose-built still: the first distillery in Italy exclusively dedicated to Gin is born in Florence. The Podere Castellare di Pelago, an Eco Resort nestled in the Florentine hills, is the home base of PETER IN FLORENCE, the first London Dry Gin produced with almost exclusively Tuscan ingredients (except for some botanicals not found in Italy), where the best raw materials for flavouring gin grow.
PETER IN FLORENCE is, as a tribute to Florence, the "gin of elegance": it focuses on the iris, the city's icon, of which not only the root is used, as per tradition, but also the petals, which are much rarer, emphasising the floral part of the distillate. It is a classic gin, in keeping with the rules of London Dry Gin, but innovative, not least in its use of various botanicals. There are fourteen botanicals in all, almost all of them local: in addition to juniper and iris, fresh bergamot peel, dried lemon peel, rose berries, fresh lavender and rosemary flowers, angelica root, coriander and bitter almonds. All sourced from local specialised and organic micro-producers. Added to this are cassia bark from China, grains of paradise from West Africa and green cardamom seeds.
For the production of PETER IN FLORENCE, a special still was developed, exclusively by Green Engineering. It is a scaled-down version of the historic Carterhead still used to produce some of the world's finest gins. The design maintains the original 1831 design, but the technological features make it state-of-the-art, unique in Italy, allowing all the fundamental parameters of distillation, such as temperature, density and volume, to be controlled with a very high degree of precision, guaranteeing high quality. It is also the only still in Italy that uses steam infusion, allowing a more delicate and natural extraction of essential oils and aromas.
