Grape variety: Pinot Bianco - Alto Adige DOC
Origin: This Pinot Bianco comes from a selection of the best vineyards, located on soils with optimal characteristics, in the most favourable areas of the Atesina plateau and the slightly sloping areas adjacent to it, not far from the estates. The special microclimate of the area combined with the organoleptic characteristics of the soils - at the same time stony, sandy and calcareous - are the secret of this success. The limited yield per hectare and the extraordinary terroir are well reflected in the exceptional quality of our Pinot Bianco. The fascinating combination of tradition and innovation, of human and natural elements, of sensuality and delicacy, brings to full expression the passion and sensitivity with which Peter Zemmer gives this wine a life of its own.
Yield: 70 hl per hectare Vinification: After the grapes are delivered and gently pressed, the deposits are left to settle naturally. Alcoholic fermentation takes place in steel tanks with pure yeasts at a controlled temperature of 18° C. After several months of maturation on selected yeasts, this great wine is able to express itself to the full. Characteristic properties: The unmistakable bouquet, distinct aromaticity and perfect acidity give this wine body, structure and a special elegance. Colour: brilliant straw yellow with greenish reflections
Aroma: aromatic, flowery, with hints of green apple and slightly spicy Taste: mineral and fruity notes, firm and pleasantly full-bodied, the right degree of acidity enhances the freshness Recommended pairings: Appetisers of all kinds, terrines and patés, fish, seafood and shellfish, white meats and poultry.
