Grape variety: Pinot Noir- Alto Adige DOC

Origin: This Pinot Noir originates from vineyards at an altitude of 450 metres above sea level in the Bassa Atesina. The special composition of the soil, which is a mixture of clay and limestone, and the particularly favourable microclimate, with significant temperature fluctuations between day and night, are ideal prerequisites for the production of a high-quality Pinot Noir.

Yield: 60 hl per hectare

Vinification: the grapes are immediately destemmed and left to ferment for around 7 days at a constant temperature (26 - 28 °C). At regular intervals, by racking and light crushing, the must comes into contact with the skins. This allows optimal absorption of the coloured pigments from the skins, while enhancing the wine's fruity aroma. After two thorough racking operations, half of this Pinot Noir is left to mature for a few months in large French oak barrels while the remainder is placed in used barriques. After blending, the wine is bottled and left to rest for a few months before being released for sale.

Organoleptic characteristics: a wine of great balance, velvety, noble, with clear fruity accents.

Colour: ruby red to garnet red Bouquet: rich bouquet with hints of berries and cherries with a fruity imprint. Taste: balanced, elegant and very persistent

Recommended pairings: Red meats, lamb, poultry and game Serving temperature: 16 - 18 °C Maturity: 5 - 6 years
