Rubatà, long breadsticks, are a specialty of Piedmontese breadsticks made with "00" flour and extra virgin olive oil, according to a traditional recipe with double dough which enhances their fragrance and structure. Their name derives from the Piedmontese dialect term rubatè ("fallen"), which describes the manual technique through which the breadstick is rolled up and made to "fall" onto the processing table, giving the shape its characteristic crunchy and irregular knots. The result is a crumbly breadstick, strong in flavor and perfect for accompanying aperitifs, starters or moments of conviviality, illustrating the authenticity of the tradition of Piedmontese breadsticks.
