Brusa is a family-run company founded in 1974 in the Biella area, combining the depth of Piedmontese tradition with an innovative and artisanal approach. Brusa’s philosophy is based on a balance between respect for traditional know-how and continuous research, with the aim of delivering excellent quality.
Rubatà, traditional long grissini, are a speciality of Piedmontese breadstick making, prepared with type “00” flour and extra virgin olive oil according to a traditional double-kneading recipe that enhances their fragrance and texture. Their name comes from the Piedmontese dialect word rubatè (“fallen”), referring to the traditional hand-working technique in which the dough is rolled and allowed to “fall” onto the work surface, giving each grissino its distinctive irregular, knobbly and crisp shape. The result is a crumbly, flavourful grissino, perfect for aperitifs, starters and convivial occasions, expressing the authentic character of Piedmontese grissini tradition.
