Produced entirely in Cuneo, an area renowned for the quality of its raw materials and artisan tradition. Production is based on a traditional method which involves slow maceration for 40-50 days, followed by refinement in the cellar at a constant temperature of around 10°C for at least 15-20 days before bottling. Filtration occurs exclusively with natural methods, through refrigeration and paper filters, without the use of chemical agents. Only selected high-quality raw materials are used for the preparation: alpine botanicals hand-picked in the Cuneo Alps, fine Piedmontese wines and exotic spices. In particular, the recipe involves the use of 56 different botanicals including herbs, peels, berries and flowers. The aromatic notes are supported by sweet and bitter orange peel, ginger, sage and yarrow, while Bourbon vanilla softens the sip, giving roundness and sweetness without compromising the overall balance. The result is a vermouth with a brilliant ruby colour, elegant and harmonious, in which the bitter notes of Roman and gentle absinthe impose themselves in the finish, supported by the earthy bitterness of gentian and the vibrant bitterness of quassio.
